Mal-Larci the Food Critic: Codfish Soufflé


Here's another cod recipe I found on the net. I assume many of these cod recipes will go well with most types of fish.

Boil half a pound or 220g of codfish omitting any salt. Mash the fish and mix it with two cupfuls of mashed potatoes (no milk). Add the yolks of two eggs well beaten. Beat thoroughly, then fold in the stiffly beaten whites of the eggs. Finally, place into a casserole dish and bake in a hot oven until puffed up and brown.

I must say, this one was quite a treat to eat because I love both fish and mashed potato. Mmm, yummy. It's on my list of favourite foods.
